Wedding Rice



1/2 kg Rice

50 gms. Cashewnuts � fry in ghee to a golden brown

50 gms. Plums � fry in ghee till they bloat

1/2 kg Onions to be sliced and fried to a golden brown.

Few cloves and cinnamon

2 hardboiled eggs



Remove have the onions and set aside with the fried plums and cashew nuts. Add the spices. Drain the rice and add it to the remaining half of fried onions and fry for a while, adding a little ghee if required. Then put in 12 cloves and 4 inch cinnamon broken into small pieces. To this add water almost double the quantity of rice and sal to taste. Allow to cook till the rice is done. Place the cooked rice in a flat dish and decorate (the top) with the fried onions, plums, cashewnuts and some hard boiled eggs, sliced or quartered.
